The toolkit was created during the Erasmus+ training course "(Fermenting Unsatisfactory Nutrition) F.U.N. in the Jar!", organized by Onestin Youth Association in Manastirea Casin, Romania, in August 2024

Aims of the tool

- to inform youth workers and project coordinators about healthy and sustainable nutrition
- to provide tools and guidance to make the first steps in fermentation
- to support project coordinators in building a balanced, sustainable and healthy menus for group projects

Description of the tool

The toolkit is structured as follows:
- General introduction
- Macronutrients and micro nutrients: concepts and tools to incorporate in programmes
- Food disorders
- Microbiota
- Recipes
- Tools and Techniques for engaging fermentation workshop
- Challenges/Ideas
- Conclusion, highlights and learning outcomes

The methodology used during the training course, that inspired the creation of the toolkit, included:
- specialized lectures on nutrition and fermentation
- practical and cooking workshops
- creative workshops on sustainable food (including gardening and food forest exploration)
- networking and open discussions regarding the food issues and challenges that the participant organization are facing
- forum theater methods linked to eating disorders
- role-play on policy making on food
- proper reading of food labels
- overcoming myths and stereotypes about food matters from the nutrition perspective

Among the participants involved in the training there were: nutritionists, chefs for youth projects, kitchen coordinators, psychologists, fermentistas, gardeners and others
